For more than three generations, the olive oil made by the Stallone family has brought their three pillar ("TRE COLONNE") philosophy to our tables and into our families: Tradition, Flavour, Authenticity. The extra virgin olive oil "Le Tre Colonne" is created in Giovinazzo, a few kilometres from Bari. The farm includes ​​about 25 hectares equipped with an irrigation system that provides just the right water requirements during periods of drought for more than 6000 trees, most of which are ancient and therefore require daily care in order to make the most of varieties such as Ogliarola Bari, Coratina, Picholine and other small local varieties; different cultivars from which you get very characteristic and characterising olive oils. The turning point was in 2008, when we put our product on the market with its own label: "Le Tre Colonne". These are not easy decisions to make for those who live in this place; it's beautiful but making ends meet relying on ancient olive trees is difficult. The Coratina, in particular, is considered a "difficult" cultivar. It's a late-aging, very aggressive and particularly bitter and spicy oil that was traditionally cut rather than served as it is. This was Salvatore Stallone's particularly bold challenge: to bottle a monovarietal Coratina in a market that favours sweet oils. "Le Tre Colonne" Farm has succeeded.
