November 2019: being at Quattrociocchi home during milling

We arrived at the company in the morning of November 2nd, Saturday and it was in total turmoil.

Americo and his collaborators also worked on the first of November, which is bank holiday in Italy.

The first to enter and the last to go out, Americo for his Olives works during the night and until early morning if necessary. Americo told us about the time where a change was requested to make quality. The challenge was not only to change the process but to move to a new culture early 2000s getting the whole process of harvesting and processing of olives into question.

We were there when milling started, Americo explained us every single step of the process of transformation of Olives. Collection of olives form the trees need to be done when the olives are  green rather than colored / black, so the olives cannot be so mature. Cleansing, drying, pressing, filtering. these are the key steps of the transformation process that need a specific temperature at each step.

We could taste a fresh made Extra Virgin Olive Oil from ‘’Frantoio’’ Olives category. Then tasted other olives, in-oil vegetables and the fantastic pâté.

He reminded her grandmother teaching him to make tomatoes sauces to be stored and confiture. He still has his own recipes and follow personally the transformation of fruits and vegetables.

Quattrociocchi farm is a family company that exist since 3 generations. The company has its olive trees in the lower Lazio area. Americo, who has run his father's company for last 20 years, is passionate about his land, its olive groves and its oil.

The family has its own olive oil mill equipped with modern machinery that guarantees the quality of the result in every phase of the milling, from the preparation of the olives to the pressing and the filter. With his dedication and continuous research, Americo has brought his olive oil to the highest podiums of the category world events since 2006. His extra virgin olive oil is also used by special families which the usage of EVOO could be considered as unusual for culture and history such as Obama family or the imperial family of Japan.

Americo continues to work hard, is anchored to the reality of daily work, with his feet on the ground, and lives these successes with a great sense of responsibility.
